Makes 6 big buns
1 cup warm water 1.2 tablespoon butter 2.7 cups bread flour 2.5 tablespoon dry milk 1.2 teaspoon instant yeast Preheat oven to 100F (if possible) Mix well until the dough is sticky, allow to rise 1 hour in 100F oven or warm place Preheat oven to 400F, take dough out, and gently DEFLATE it, and place it onto a greased pan, let rest 15m Bring to boil: 8 cups water 1/4 cup (4 tablespoons) baking soda 1 tablespoon salt Form dough into balls / buns and drop into the boiling water, 30s, then flip, then 30s longer. Place each bun on a baking sheet, on parchment paper, and cut a cross or groove/s into it, on top, using scissors or a knife. Sprinkle each bun with course sea salt! Bake for 30 minutes at 400F, or until deep dark brown.
